Cannellini Cream Soup with Fresh Tomatoes, Scampi, and Basil

Ingredients for 4 people

2 1/2 tablespoons Extra Virgin Olive Oil Divided
3 cloves Garlic
45 ounces Cannellini Beans Canned
10 tablespoons Water Divided
1 pound Fresh Cherry Tomato Halved
10 leaves Fresh Basil Divided
1/4 teaspoon Salt
1/8 teaspoon Black Pepper Freshly Ground
18 Scampi Tails (May Substitute Tiger Prawns)

1. heat 2 tablespoons of olive oil in a large skillet over medium heat

2.   add 2 minced garlic cloves and sauté cook 2-3 minutes until golden yellow

3. Add beans and liquid from cans

4. simmer for 5 minutes

5.   puree bean mixture in blender with ½ cup water

6. strain, discard particles, and set aside

7. Heat remaining ½ tablespoon olive oil in skillet

8.   add 1 whole garlic clove and sauté for 1 minute

9. add cherry tomatoes, remaining 2 tablespoons water and 4 basil leaves

10.   simmer on medium low heat 3-4 minutes

11. Add salt, pepper and shrimp

12.   cook for 1 minute or until shrimp is opaque

13. Pour bean soup into individual bowls, place 1 tablespoon tomato sauce in center, garnish with 3 scampi tails

14.   drizzle with tuscan extra virgin olive oil and garnish with a leaf of fresh basil

15.   sprinkle with freshly ground black pepper if desired
