Ingredients for 4 people


1 clove Garlic Sliced Thin
3 leaves Fresh Sage
9 ounces Cannellini Beans Canned
2 Fresh Plum Tomatoes



Preparation
1. HEAT olive oil in a large skillet over medium heat

2. ADD garlic and sage

3. Sauté until garlic turn yellow

4. Add cannellini beans and water, simmer for 5 minutes

5. Meanwhile; BLANCH tomatoes in boiling water for 1 minute

6. Cool and remove skins

7. Remove seeds

8. Cut the pulp into ¼ inch cubes and add to beans

9. Season to taste with salt and pepper, simmer for 5 minutes

10. ADD hot water to thin as desired

11. Discard sage and serve drizzled with an abundant amount of olive oil
