Ingredients for 4 people

1 ¾ pounds cardoons
5 tablespoons + 1 teaspoon butter
1 cup grated Parmigiano Reggiano cheese
1 lemon

Preparation 10 minutes preparation + 40 minutes cooking
1. Clean cardoons, peel and remove tough fibers, and cut into medium-sized pieces

2. Place in water with lemon juice, then boil for about 10 minutes in salted acidulated water

3. Butter a baking dish and arrange one layer of cardoons, sprinkle with grated cheese and drizzle with melted butter

4. Make a second layer, sprinkle with grated cheese and drizzle with melted butter, continuing to make layers with all the rest of the ingredients

5. Bake in a preheated 350° F oven for about 30 minutes

6. Serve hot
