Ingredients for 4 people

1 2/3 cup flour (type 00)
3 tablespoons potato starch
11 tablespoons butter
1 cup confectioner's sugar
1 egg yolk 1/2 vanilla bean
1/2 cup colored sprinkles (optional)

Preparation 40 minutes preparation + 15 minutes cooking
1. Remove butter from the refrigerator at least 1/2 hour before starting

2. Make an incision in the vanilla bean and scrape out seeds

3. Combine with sugar

4. Mix flour with potato starch and confectioner's sugar

5. Add egg yolk and butter and knead gently by hand until smooth (do not overwork)

6. Wrap in plastic and refrigerate for at least 30 minutes

7. Roll out dough with a rolling pin to a thickness of about 1/4 inch

8. Dust with colored sprinkles, if used, and lightly press down with rolling pin to seal them into the dough

9. Cut out shapes with cookie cutters and arrange on a baking sheet lined with parchment paper

10. Bake in a preheated 350°F oven for 13 - 15 minutes
