Ingredients for 8 people

3 Eggs
1/2 cup Sugar Divided
3 cups Carrots Peeled Grated
1/2 cup Amaretti Breadcrumb
1/2 cup Flour
2 cups Almond Flour
1 teaspoon Baking Powder

1. preheat oven to 350°f

2.   separate egg whites and egg yolks

3.   blend egg yolks with half of the sugar in a mixer until light in color and sugar dissolves

4.   stir in carrots, amaretti crumbs, both types of flour and baking powder

5.   whip egg whites with the remaining sugar until stiff peaks form, approximately 2 minutes

6. Mixture should be very stiff

7.   add ½ of the whipped egg whites into the carrot mixture and fold

8. Repeat with remaining half of whipped egg whites

9.   line a 9-inch spring form pan with parchment paper and grease with a small amount of butter

10. Fill pan with cake mixture

11.   bake at 350°f for approximately 30-35 minutes

12.   remove pan from oven to cool

13. Remove cake from pan sprinkle with powdered sugar
