Ingredients for 4 people


10 ½ ounces stale bread crusts removed
1 tablespoon chopped parsley
1 clove garlic minced
5 eggs
extra virgin olive oil as needed
2 ½ cups grated semi-aged
Pecorino cheese
tomato sauce (optional) to taste
salt and pepper to taste

Preparation 20 minutes preparation + 5 minutes cooking

In a bowl, mix the bread with crusts removed, Pecorino cheese, eggs, salt and pepper. Mix in garlic and parsley. Form into small balls.

Heat enough olive oil in a pan to completely cover the cheese balls. Fry cheese balls in hot oil until evenly browned, turning frequently.

The cheese balls may be served in tomato sauce, if desired, in which case they should simmer in the prepared sauce for about 15 minutes.
