1 3/4 pounds (28 ounces) bread dough raised
¼ pound Pecorino Dolce cheese
3 tablespoons extra virgin olive oil

Preparation 20 minutes preparation + 20 minutes cooking

Grate half of the Pecorino, and cut the other half into small pieces. Knead the bread dough with the oil and cheese (including the diced pieces).

Form into a loaf, cover with a dish towel or plastic wrap, and set aside in a warm place for about 15 minutes.

Pinch off about a tablespoon of dough, roll into a rope and connect the ends to form a small ring. Use the remainder of the dough to make more rings.

Arrange them apart from each other on a greased baking sheet. Allow to rise again for about 30 minutes.

Bake in a hot oven (400°F) for about 20 minutes. Cool before serving.o
