8 eggs + 4 egg whites
½ teaspoon cinnamon
½ packet vanilla powder
2/3 cup unsweetened cocoa powder
1 tbsp Strega or another aromatic liqueur
flour as needed
oil for frying as needed
confectioner's sugar to taste

Preparation 15 minutes preparation + 15 minutes cooking

Boil the eggs in a saucepot over medium heat for 10 minutes until hard boiled.

Cool, peel and cut in half, separating yolks from whites. Mix yolks with cinnamon, vanilla, liqueur and cocoa, forming a rather thick paste.

Fill the egg white halves with this mixture. Lightly dredge each filled egg in flour, then in the four egg whites, beaten into stiff peaks.

Fry eggs in a generous amount of hot oil (check temperature with a few drops of egg white) until golden brown on both sides, turning once. Remove and drain on paper towels.

Arrange on a serving platter and sprinkle with confectioner's sugar.
