2 pounds almonds
2 pounds sugar
Extra virgin olive oil as needed

Preparation 25 minutes preparation + 30 minutes cooking

Plunge the almonds into boiling water for a few seconds, peel and chop coarsely. In a saucepan over medium heat, stir the almonds and sugar with a wooden spatula until dark brown.

Immediately pour out on an oiled marble surface (or metal baking sheet). Spread evenly with the wet blade of a knife. Cool and cut into pieces.
