Cinnamon Cookies

Ingredients for 4 people

9 tablespoons butter 1/2 cup sugar 1 1/2 cups flour Cinnamon to taste Cocoa powder to taste Confectioner's sugar to taste

Preparation 10 minutes preparation + 15 minutes cooking
1. Soften butter at room temperature for at least one hour

2. Combine butter and sugar

3. Mix flour with cinnamon powder, then stir into the butter mixture

4. Mix well and knead by hand for a few minutes until smooth and firm

5. Cover with plastic wrap and set aside to rest

6. Sprinkle flour on half of a large piece of parchment paper

7. Place dough in the middle of the floured surface, dust with flour and cover with the other half of paper

8. Flatten with a rolling pin until 1/4-inch thick

9. Remove parchment paper, cut dough into little rectangles and shape as desired, recovering and using any leftover dough bits to make more cookies

10. Using a spatula, arrange the cookies on a buttered baking sheet and cook in a preheated 325°F oven for 15 minutes

11. When the cookies are ready, cool for a few minutes, then sprinkle with either cocoa powder or confectioner's sugar
