Ingredients for 4 people


8 cups cake flour
1 (¼ ounce) package dry yeast
2 cups water
5 ½ tablespoons extra virgin olive oil
3 ½ teaspoons salt
Pepper to taste
2 cups water
2 tablespoons extra virgin olive oil
Pinch of salt



Preparation 10 minutes preparation + 20 minutes cooking
1. Knead cake flour with yeast and 2 cups of water

2. Do not add the salt until after the dough is kneaded, because it would interfere with the yeast

3. Cover with a towel and allow to rise for at least one hour

4. Transfer to an oiled baking sheet and press the dough by hand until about 0

5. 8 inch thick

6. Make small indentations with your fingers over the whole surface

7. Allow to rise on the baking sheet for an additional 40 minutes

8. Mix the ingredients for the "solution" very well and brush on the focaccia

9. Bake in a 400°F preheated oven for about twenty minutes
