Ingredients for 4 people

½ TABLESPOON Salt-Packed Caper
1 ½ POUND Fresh Yellow Tail Tuna Sliced Thin
1 Fresh Lemon Juiced
6 TABLESPOONS Extra Virgin Olive Oil
1/8 TEASPOON Black Pepper Freshly Ground
4 LEAVES Fresh Basil Julienne
2 CUPS Baby Greens
½ CUP Grape Tomato

Preparation 2 hours preparation
1. SOAK capers in fresh water for ½ hour

2. Rinse well

3. FREEZE the yellow tail tuna loin until it is partially frozen, approximately 2 hours

4. Cut into thin slices and place on individual plates

5. Keep refrigerated

6. MIX together lemon, oil and a little salt and pepper

7. SEASON tuna with capers, part of the lemon dressing, basil, salt and pepper

8. On the side mix the salad with the tomatoes and the remaining dressing

9. Place a little salad at the center of each plate before serving
