Fruit Salad with Lime Mousse

Ingredients for 4 people

1 pound mixed fresh fruit (strawberries
pineapple etc.)
1/3 cup sugar
1 tablespoon rum
4 egg yolks
1/2 cup sugar
2 limes
1 cup whipping cream
2 tablespoons cherry-flavored gelatin

Preparation 25 minutes preparation + 15 minutes cooking
1. Wash, peel and cut the fruit into bite-size pieces

2. Put the fruit in a bowl, add the sugar and rum and refrigerate

3. Whip the egg yolks with the sugar in a stainless steel bowl

4. Add the juice of two limes and the zest of one

5. Cook the mixture in a double boiler over medium heat until it forms a custard

6. Cool the custard and fold in the cold whipped cream a little at a time with a spatula

7. Remove the fruit from the refrigerator and immediately divide among four serving bowls

8. Pour one-quarter of the custard cream over each portion, top with a teaspoon of cherry-flavored gelatin and serve immediately
