1 tablespoon dry red wine
1 cup grated Parmigiano Reggiano
4 tablespoons butter

Preparation 40 minutes preparation + 10 minutes cooking

Melt half of the butter in a large pan over medium heat.

Add diced pancetta and sauté for 5 minutes.

Add washed, dried and coarsely chopped Swiss chard. Simmer for 2 minutes.

Add wine and allow to evaporate.

Season with salt, mix well and remove from heat.

Meanwhile, boil pasta in a large pot of salted water for 6 minutes.

Drain and add the rest of the butter and Parmigiano.

Mix gently and serve immediately.

Farfalle may be substituted for strozzapreti.
