Ingredients for 4 people
- 1/2 box Barilla® Gemelli
- 2 tablespoons pine nuts
- 2 tablespoons extra virgin olive oil
- 1 clove garlic, minced
- 1 medium zucchini, julienne
- 2 medium carrots, julienne
- 1/2 cup Parmigiano-Reggiano cheese, freshly grated
- 1/2 teaspoon salt
- 1/8 teaspoon black pepper, freshly ground

Bring a large pot of water to a boil

toast pine nuts in a large skillet over medium heat 4 to 5 minutes or until golden brown

Remove from skillet set aside

Heat oil in skillet over medium-high heat
- Stir in garlic cook 30 seconds
- Add zucchini and carrots sauté 6 to 7 minutes or until crisp-tender
- Stir in pine nuts remove from heat

Meanwhile, cook Gemelli according to package directions drain and return to pot
- Add cooked vegetable mixture and remaining ingredients to hot gemelli toss

Transfer to serving platter
