Ingredients for 4 people

1/2 box Barilla Gemelli
2 tablespoons Pine Nuts
2 tablespoons Extra Virgin Olive Oil
1 clove Garlic Minced
1 Medium Zucchini Julienne
2 Medium Carrots Julienne
1/2 cup Parmigiano Reggiano Cheese Freshly Grated
1/2 teaspoon Salt
1/8 teaspoon Black Pepper Freshly Ground

Preparation 15 minutes preparation + 14 minutes cooking
1. Bring a large pot of water to a boil

2. toast pine nuts in a large skillet over medium heat 4 to 5 minutes or until golden brown

3. Remove from skillet set aside

4. Heat oil in skillet over medium-high heat

5. Stir in garlic cook 30 seconds

6.  Add zucchini and carrots sauté 6 to 7 minutes or until crisp-tender

7. Stir in pine nuts remove from heat

8. Meanwhile, cook Gemelli according to package directions drain and return to pot

9. Add cooked vegetable mixture and remaining ingredients to hot gemelli toss

10. Transfer to serving platter
