14 ounces Belice olives
2/3 cup celery
4 teaspoons extra virgin olive oil
5 mint leaves
1/2 cup white wine vinegar
salt to taste

Crush and pit the olives and rinse under running water. Place in a salad bowl.

Add mint and celery leaves and dress with oil, a large amount of vinegar and salt.
