1 sprig Fresh Rosemary
1 sprig Fresh Sage
1 teaspoon Black Pepper Freshly Ground
2 cloves Garlic
1/2 cup Extra Virgin Olive Oil

remove the bone from the lamb chop closest to the edge.

pound each chop with a meat mallet without tearing it, until meat is approximately 3/8 inch thick.

marinate lamb chops for at least one day with pepper, herbs, garlic and oil.

sear lamb chops on a hot grill until medium doneness. sprinkle with sea salt to taste.

garnish with sage and rosemary. drizzle with olive oil.
