Grilled Lamb Chops Marinated with Rosemary and Sage

Ingredients for 4 people


12 Loin Lamb Chops
1 sprig Fresh Rosemary
1 sprig Fresh Sage
1 teaspoon Black Pepper Freshly Ground
2 cloves Garlic
1/2 cup Extra Virgin Olive Oil



Preparation
1. remove the bone from the lamb chop closest to the edge

2. pound each chop with a meat mallet without tearing it, until meat is approximately 3/8 inch thick

3.   marinate lamb chops for at least one day with pepper, herbs, garlic and oil

4.   sear lamb chops on a hot grill until medium doneness

5. sprinkle with sea salt to taste

6.   garnish with sage and rosemary

7. drizzle with olive oil
