Grilled Lamb Chops Marinated with Rosemary and Sage

Ingredients for 4 people


12 Loin Lamb Chops
1 SPRIG Fresh Rosemary
1 SPRIG Fresh Sage
1 TEASPOON Black Pepper Freshly Ground
2 CLOVES Garlic
½ CUP Extra Virgin Olive Oil



Preparation
1. REMOVE the bone from the lamb chop closest to the edge

2. POUND each chop with a meat mallet without tearing it, until meat is approximately 3/8 inch thick

3. MARINATE lamb chops for at least one day with pepper, herbs, garlic and oil

4. SEAR lamb chops on a hot grill until medium doneness

5. Sprinkle with sea salt to taste

6. GARNISH with sage and rosemary

7. Drizzle with olive oil
