Preparation 15 minutes preparation + 70 minutes cooking

To make the sauce, chop the garlic, parsley and rosemary together. Add 1 tablespoon of anchovy paste and chopped chili pepper (according to personal taste).

Thin the mixture with ½ cup vinegar and ½ cup white wine, mixed together.

Cut the lamb into pieces, and carefully rinse and dry it. Heat the oil in a pan over medium heat and brown the meat evenly.

For ¾ of the indicated cooking time (about 50-55 minutes), cover and cook over low heat. Add the sauce prepared as above and continue cooking, uncovered.
