Ligurian Herb Focaccia

Bread, focaccia and pizza


Ingredients for 4 people

8 cups Italian type “00” flour
1 (1/4 ounce) package dry yeast
½ cup extra virgin olive oil
3 cups water
3 teaspoons coarse salt
1 ½ teaspoons sage
1 ½ teaspoons rosemary
1 teaspoon thyme

Preparation 30 minutes preparation + 20 minutes cooking
1. Knead the flour with the yeast, water, chopped herbs and 2/3 of the oil

2. Let it rest for at least one hour, covered with a dish towel

3. Grease a baking dish and press the dough to a uniform thickness

4. Drizzle the top of the focaccia with oil, sprinkle with coarse salt and allow to rise again for 40 minutes

5. Bake in a preheated 400°F oven for about 20 minutes until the surface is golden brown and crispy
