8 cups fish broth
1 cup rice
1 bunch Tuscan kale (Lacinato kale)
4 tablespoons extra virgin olive oil
1 onion
1 celery rib
1 bunch parsley
Salt to taste

Preparation 15 minutes preparation + 45 minutes cooking

Mince onion, celery and parsley.

Cut Tuscan kale into strips. Heat oil in a pan over medium heat and sauté minced vegetables for about 5 minutes.

Add kale and cook for a few minutes. Pour in fish broth and bring to a boil.

Cook for about 15 minutes and season with salt to taste.

Add rice and cook according to package directions.

Drizzle with one tablespoon of oil and combine. Serve warm.
