Sweets and Fruit

Ingredients for 4 people

3 eggs
7 egg yolks
1 cup sugar
1 cup flour
1/3 cup potato starch
vanilla to taste
lemon zest to taste
4 tablespoons melted butter

Preparation 30 minutes preparation + 30 minutes cooking
1. Melt butter in the top of a double boiler so that it does not brown

2. Remove from the heat as soon as it has melted and set aside to cool

3. By hand or with an electric whisk, beat eggs, egg yolks and sugar until creamy

4. Stir in grated lemon zest

5. Carefully fold in sifted flour and cornstarch and add vanilla

6. Pour in melted, cooled butter and carefully combine

7. Pour mixture in a buttered and floured round ovenproof dish to 2/3 full

8. Bake in a preheated 350°F oven for about 30 minutes

9. Remove from the oven and allow to cool

10. Turn over on a serving platter and sprinkle with confectioner's sugar
