4 tablespoons extra virgin olive oil
1 clove garlic
1 14 oz can crushed tomatoes
1 dried hot pepper
1 tablespoon chopped parsley
salt to taste

Clean, rinse and bone the anchovies and mash in a mortar with pestle or chop finely with a knife.

Heat oil in a large pan over medium heat.

Add peeled garlic and hot pepper.

Discard garlic as soon as it browns.

Add mashed anchovies, followed by crushed tomatoes. Cook for about 8 minutes, seasoning with salt if necessary.

Meanwhile, boil pasta in a large pot of salted water according to package directions.

Drain, reserving some cooking water, and toss with prepared sauce.

Add chopped parsley and a few tablespoons of pasta cooking water, if necessary. Serve immediately.
