1/2 box Barilla Mezzi Rigatoni
1 teaspoon Extra Virgin Olive Oil Divided
2 ounces Fresh Spinach
3 ounces Ricotta Cheese
2 tablespoons Parmigiano Reggiano Cheese Divided
1 Package Small Paper Liner

Bring a pot of water to a full boil. add salt to taste.

add pasta and cook 10 minutes. drain well and place pasta on a large sheet pan.

drizzle with a little olive oil to taste and let cool.

ricotta and spinach filling: sauté spinach in 1 teaspoon olive oil over medium heat. cool, drain and chop fine.

grate 2 tablespoons parmigiano cheese.

add spinach to the ricotta cheese and mix until blended.

add parmigiano cheese and mix well.

fill each mezzi rigatoni with filling using a pastry bag.

place each rigatoni in a miniature paper liner. garnish with parmigiano cheese shavings.
