4 tablespoons extra virgin olive oil (divided)
1 fresh lemon
2 cups frozen peas
1 pound boneless skinless diced chicken breast
5 slices bacon (cut into strips)
2 cups halved cherry tomatoes
1 cup fresh mozzarella cheese cubed (may substitute shredded mozzarella cheese)

Preparation 30 minutes preparation + 20 minutes cooking

Bring a large pot of water to a boil. cook Barilla® Mini Wheels for 6 minutes drain and drizzle with 2 tablespoons of oil. spread pasta on a cookie sheet or baking tray to cool.

Juice lemon to yield 2 tablespoons lemon juice. Bring a medium pot of salted water to a boil. Add peas and boil for 5 minutes drain and cool.

Heat a medium skillet over medium heat. Add remaining oil and chicken. Cook for 4-5 minutes or until cooked through season with salt and pepper.

Allow chicken to cool. Cook bacon in same skillet until crispy drain fat and allow to cool.

Combine all ingredients and allow to rest 30 minutes before serving.
