Mussel Soup

Ingredients for 4 people

4 ½ pounds mussels
2/3 cup extra virgin olive oil
2 cloves garlic
2 tablespoons chopped parsley
2/3 cup dry white wine
Salt and pepper to taste
12 slices toasted bread

Preparation 15 minutes preparation + 10 minutes cooking
1. Clean mussels with the appropriate brush and wash thoroughly

2. Heat oil in a large pan over medium heat

3. Sauté chopped garlic and parsley briefly, add wine and a pinch of salt and pepper

4. After 5 minutes, add washed mussels and cook until they open

5. Cut one garlic clove in half and rub on slices of bread, previously toasted in the oven or in a toaster

6. Place slices of bread in individual soup dishes and cover with the mussels and their sauce

7. Serve immediately

8. If desired, the sauce can be spiced up with some hot red pepper, or, chopped parsley can be sprinkled on the mussels before removing the pan from the heat
