Panzanella (Bread Salad)

Panzanella (Bread Salad)

Ingredients for 4 people

1 pound day-old rustic bread
2 ripe tomatoes
2 red onions
1 cucumber (optional)
Basil leaves
Extra virgin olive oil as needed
Vinegar to taste
Salt and pepper to taste

Preparation 30 minutes preparation
1. Slice bread and dip in cold water for a few minutes

2. Squeeze out any excess water, then rub slices in your hands to create lots of dry crumbs

3. Put crumbs in a salad bowl

4. Add thinly sliced basil leaves, cucumber, onions, tomatoes

5. Dress with oil, a pinch of salt and freshly ground pepper

6. Keep refrigerated until ready to serve

7. Add a splash of wine vinegar before serving
