1 pound day-old rustic bread
2 ripe tomatoes
2 red onions
1 cucumber (optional)
Basil leaves
Extra virgin olive oil as needed
Vinegar to taste

Slice bread and dip in cold water for a few minutes. Squeeze out any excess water, then rub slices in your hands to create lots of dry crumbs.

Put crumbs in a salad bowl. Add thinly sliced basil leaves, cucumber, onions, tomatoes. Dress with oil, a pinch of salt and freshly ground pepper.

Keep refrigerated until ready to serve. Add a splash of wine vinegar before serving.
