Polenta with Fonduta

Ingredients for 4 people

2 CUPS Milk
4 TABLESPOONS Butter Divided
1 1/2 CUP Fontina Cheese Cubed
2 Eggs Yolk Only
4 CUPS Water
1 CUP Polenta
1 TABLESPOON Extra Virgin Olive Oil

1. Fonduta: BRING the milk to boil

2. MELT half the butter in a separate saucepan; stir in flour and cook for three minutes

3. STIR in milk and simmer for five minutes, stirring continuously

4. ADD cheese, salt, pepper and egg yolks; stir continuously until completely melted

5. Polenta: BRING water to boil in a medium sized pot

6. WHISK in polenta flour and cook for 10 minutes (or for the recommended cooking time)

7. STIR in remaining cold butter

8. PLACE a scoop of polenta on each plate
