Polenta with Fonduta



Ingredients for 4 people


2 cups Milk
4 tablespoons Butter Divided
2 tablespoons Flour
1 1/2 cup Fontina Cheese Cubed
2 Eggs Yolk Only
4 cups Water
1 cup Polenta
1 tablespoon Extra Virgin Olive Oil



Preparation
1. fonduta: bring the milk to boil

2.   melt half the butter in a separate saucepan stir in flour and cook for three minutes

3.   stir in milk and simmer for five minutes, stirring continuously

4.   add cheese, salt, pepper and egg yolks stir continuously until completely melted

5.   polenta: bring water to boil in a medium sized pot

6.   whisk in polenta flour and cook for 10 minutes (or for the recommended cooking time)

7.   stir in remaining cold butter

8.   place a scoop of polenta on each plate
