Polpo in Purgatorio (Spicy Octopus)

Ingredients for 4 people

1 pound baby octopus
1/2 cup extra virgin olive oil
2 onions
Chili pepper to taste
1/2 cup parsley
Salt and pepper to taste

Preparation 30 minutes preparation + 1 hours cooking
1. Clean the octopus in salted water and rinse well

2. Heat oil in a pan over medium heat

3. Add onion, a pinch of salt and pepper and cover with a lid

4. Cook over low heat for about 1 hour, stirring occasionally and adding spoonfuls of water, if too dry

5. Cook a bit longer if the octopus is still tough

6. Serve warm
