Ingredients for 4 people


4 Tomatoes
1 cup Breadcrumb
3/4 cup Parmigiano Reggiano Cheese Freshly Grated
1 clove Garlic Minced
3 tablespoons Fresh Parsley Chopped
1/4 cup Extra Virgin Olive Oil



Preparation
1. PREHEAT oven to 350°F

2. CUT tomatoes in half lengthwise

3. Scoop out seeds; place bottom side down on a baking sheet

4. COMBINE breadcrumbs, cheese, garlic, salt, pepper, and parsley in a medium bowl

5. Add olive oil and mix well

6. FILL each tomato half with breadcrumb mix

7. Drizzle with additional olive oil

8. BAKE for 30 minutes; place under broil and broil for 1-2 minutes or until golden on top
