Ingredients for 7 people


1 POUND Porcini Mushrooms (May Substitute Button Mushrooms)
1 CUP Celery Hearts
1/3 CUP Extra Virgin Olive Oil
1 1/2 Fresh Lemon
3/4 TEASPOON Salt
1/4 TEASPOON Black Pepper Freshly Ground
2 OUNCES Parmigiano Reggiano Cheese Shaved



Preparation
1. CLEAN mushrooms and slice into thin slices

2. Peel celery and cut into thin julienne strips

3. JUICE lemons to yield 3 tablespoons lemon juice

4. COMBINE mushrooms and celery in a large bowl

5. Add olive oil, lemon juice, salt and pepper; mix lightly

6. SERVE on individual plates

7. Garnish with Parmigiano Reggiano cheese shaves
