Ingredients for 4 people


2 pork tenderloins (about 1 ½ pounds)
12 slices Prosciutto di Parma
Academia Barilla Balsamic Must to taste
1 sprig rosemary
2 cloves garlic
10 ounces baby greens
Academia Barilla Monti Iblei Extra Virgin Olive Oil to taste
salt and pepper to taste

Preparation 15 minutes preparation + 10 minutes cooking

Remove any excess fat from the Prosciutto. Cut the pork tenderloin into small pieces, about 2 ounces each. Wrap each piece in a slice of prosciutto, securing with a toothpick.

Heat a drizzle of oil in a pan until very hot. Add the rosemary and garlic and the wrapped pork bites. Drizzle the meat with Balsamic must as desired and cook for 5 minutes, turning on all sides.

The center of the meat should remain pink. Season pork with a pinch of salt and freshly ground pepper, and drizzle with olive oil. Finish with a balsamic must reduction. Serve on a bed of baby greens.
