Ingredients for 4 people


2 pounds smoked (or fresh) pork
spare ribs separated and halved (ask your butcher to prepare them)
3 1/2 tablespoons butter
2 cups white wine
Salt and pepper to taste
2 cups water
2/3 cup corn meal

Preparation 20 minutes preparation + 60 minutes cooking

Melt butter in a casserole pan (preferably clay) over very low heat. Turn up the heat and add ribs. Season with salt and pepper and allow to brown evenly on all sides.

If you are using fresh ribs, dip them in plain boiling water for 5 minutes. Deglaze with white wine and allow to reduce. Cook for one hour on low heat, stirring frequently while adding 2 cups of water combined with corn meal. Serve hot.
