2 cups flour 3 1/3 pounds starchy potatoes Water as needed Salt to taste Milk as needed 10 1/2 ounces of tender leeks
already cleaned. Extra virgin olive oil as needed Butter as needed Milk as needed Salt to taste

Preparation 15 minutes preparation + 45 minutes cooking

In a pot, combine water, a bit of milk, salt and peeled potatoes (potatoes will fall apart while cooking).

Add flour and keep stirring to obtain a mixture similar to polenta.

Heat 2 tablespoons of oil and a pat of butter in a pan over low heat and sauté thinly sliced leeks.

Keep stirring so they do not burn.

Season with salt and continue cooking, adding one cup of milk.

If the mixture is too dry, pour in a bit of warm water or broth.

Serve with the potato polenta.
