Main course

Ingredients for 4 people

1 rabbit (about 2 1/2 pounds)
1 cup + 1 tablespoon wine vinegar
2 cloves garlic
5 tablespoons capers
1 anchovy
1/2 cup extra virgin olive oil
Salt and pepper to taste
1 teaspoon potato starch
6 sage leaves

Preparation 15 minutes preparation + 50 minutes cooking
1. Cut rabbit into pieces, wash and dry it with paper towels

2. Heat oil in a pan and brown rabbit pieces

3. Add sage and garlic


5. Season with salt and pepper and add a cup each of vinegar and water

6. Cover and cook over moderate heat for about 30 minutes, adding tablespoons of water, if too dry

7. Rinse, bone and dissolve anchovy in remaining 1 tablespoon of vinegar

8. When the rabbit is cooked, add capers and anchovy and boil for a couple of minutes to thicken the sauce

9. Serve immediately
