Ingredients for 4 people
1 rabbit (about 2 1/2 pounds)
1 cup + 1 tablespoon wine vinegar
2 cloves garlic
5 tablespoons capers
1 anchovy
1/2 cup extra virgin olive oil
Salt and pepper to taste
1 teaspoon potato starch
6 sage leaves
Ingredients

Preparation 15 minutes preparation + 50 minutes cooking

Cut rabbit into pieces, wash and dry it with paper towels.

Heat oil in a pan and brown rabbit pieces.

Add sage and garlic. .

Season with salt and pepper and add a cup each of vinegar and water. Cover and cook over moderate heat for about 30 minutes, adding tablespoons of water, if too dry.

Rinse, bone and dissolve anchovy in remaining 1 tablespoon of vinegar.

When the rabbit is cooked, add capers and anchovy and boil for a couple of minutes to thicken the sauce. Serve immediately.
