Ripe Tomatoes with Balsamic Vinegar and Parmigiano Cheese



Ingredients for 4 people


1 tablespoon Barilla Balsamic
Vinegar From Modena
4 Large Ripe Tomatoes
1 Egg Hard Boiled
2 teaspoons Mustard
1/2 cup Extra Virgin Olive Oil
1/2 cup Parmigiano Reggiano Cheese Shaved
4 leaves Fresh Basil Chopped



Preparation
1. blanch tomatoes in boiling water

2. shock them in ice and water

3. peel and cut into wedges

4. prepare the dressing by pureeing the hard boiled egg yolk with balsamic vinegar, mustard, salt and pepper

5. Add the oil and chopped egg whites

6. season the tomatoes with the dressing garnish with shaved parmigiano cheese and fresh basil
