Ingredients for 4 people


2 1/2 cups buckwheat flour
1 2/3 cups flour (type 00)
1/2 pound Casera cheese (from Valtellina)
1/2 teaspoon baking soda
Salt to taste
4 tablespoons oil for frying or lard

Preparation 20 minutes preparation + 5 minutes cooking

Combine flours with a pinch of salt, add water and knead until smooth and springy. Cube Casera cheese and mix until cheese starts to melt and becomes stringy.

Set aside to rest for about 2 hours. Add baking powder just before frying. Heat oil in a pan (check temperature with a few pieces of dough).

Drop spoonfuls of dough in the pan, making sure a few cheese cubes are included. Continue with the remaining dough. Fry, turning often, so that fritters brown evenly.

Serve warm with chicory or curly endive salad.
