Rospi (Cheese Stuffed Fritters)

Rospi (Cheese Stuffed Fritters)

Ingredients for 4 people

2 1/2 cups buckwheat flour
1 2/3 cups flour (type 00)
1/2 pound Casera cheese (from Valtellina)
1/2 teaspoon baking soda
Salt to taste
4 tablespoons oil for frying or lard

Preparation 20 minutes preparation + 5 minutes cooking
1. Combine flours with a pinch of salt, add water and knead until smooth and springy

2. Cube Casera cheese and mix until cheese starts to melt and becomes stringy

3. Set aside to rest for about 2 hours

4. Add baking powder just before frying

5. Heat oil in a pan (check temperature with a few pieces of dough)

6. Drop spoonfuls of dough in the pan, making sure a few cheese cubes are included

7. Continue with the remaining dough

8. Fry, turning often, so that fritters brown evenly

9. Serve warm with chicory or curly endive salad
