2 pink grapefruit
16 walnuts
7 ounces fresh spinach leaves
3 ½ tablespoons extra virgin olive oil
salt and pepper to taste

Preparation 10 minutes preparation + 0 minutes cooking

Carefully peel and cut the grapefruit to remove all traces of the skin, pith and internal membranes. Squeeze the remaining pulp into a container.

Add the extra virgin olive oil and a pinch of salt to the juice to make a citronette (which can be used as a sour dressing). Carefully wash and dry the spinach. Shell the walnuts.

In a bowl, dress the spinach with the citronette dressing. Arrange the salad on a plate and garnish with the walnuts and grapefruit sections. Sprinkle with black pepper.
