Salad with Pink Grapefruit, Spinach and Walnuts

Ingredients for 4 people

2 pink grapefruit
16 walnuts
7 ounces fresh spinach leaves
3 ½ tablespoons extra virgin olive oil
salt and pepper to taste

Preparation 10 minutes preparation
1. Carefully peel and cut the grapefruit to remove all traces of the skin, pith and internal membranes

2. Squeeze the remaining pulp into a container

3. Add the extra virgin olive oil and a pinch of salt to the juice to make a citronette (which can be used as a sour dressing)

4. Carefully wash and dry the spinach

5. Shell the walnuts

6. In a bowl, dress the spinach with the citronette dressing

7. Arrange the salad on a plate and garnish with the walnuts and grapefruit sections

8. Sprinkle with black pepper
