Ingredients for 6 people


1 pound Porcini Mushrooms (May Substitute Button Mushrooms)
1 cup Semolina Flour
32 FL. ounces Frying Oil
2 tablespoons Fresh Italian Parsley Finely Chopped



Preparation
1. CLEAN mushrooms and cut into 1-inch slices

2. Coat mushrooms with flour

3. HEAT oil to 350°F in a medium sized heavy saucepan

4. ADD mushrooms in batches and deep fry 1 minute or until golden and crispy

5. Drain on absorbent paper towels

6. Season to taste with salt and pepper

7. GARNISH with chopped parsley
