Ingredients for 4 people


2 cups Cherry Tomatoes Halved Seeded
1/2 cup Extra Virgin Olive Oil
1 clove Garlic
1 sprig Fresh Rosemary
1 pound Shrimp
28 ounces Garbanzo Beans Canned
1 Fresh Lemon Juiced


Ingredients

Preparation 150 minutes preparation + 8 minutes cooking

place cherry tomatoes on a baking sheet and dry in the oven at 200°f for approximately 2 hours.

sauté garlic clove, gently pressed, with rosemary and half the oil.

add shrimp and brown on both sides. Season with salt and pepper discard garlic and rosemary. Set shrimp aside.

sauté garbanzo beans in the same skillet with the remaining oil for two minutes.

combine shrimp with tomatoes and garbanzo beans squeeze juice from lemon onto shrimp and garbanzo beans. Serve warm, garnished with rosemary.
