Spaghetti with Garlic, Oil and Anchovies

First course

Ingredients for 4 people

1 box spaghetti
4 tablespoons extra virgin olive oil
2 cloves garlic
6 fresh anchovies
pepper to taste
1 tablespoon chopped parsley

Preparation 10 minutes preparation + 10 minutes cooking
1. Heat oil in a pan over medium heat

2. Sauté two peeled garlic cloves until golden brown, then discard

3. Add rinsed, boned, chopped anchovies and sauté for 2 minutes

4. Remove pan from heat and break apart anchovies with a fork

5. Season with pepper and add chopped parsley

6. Meanwhile, boil pasta in a large pot of salted water according to package directions

7. Drain, reserving some cooking water, and toss with prepared sauce, adding a small amount of pasta cooking water, if necessary

8. Serve hot
