Spaghetti with Garlic, Oil and Anchovies

Ingredients for 4 people


1 box spaghetti
4 tablespoons extra virgin olive oil
2 cloves garlic
6 fresh anchovies
pepper to taste
1 tablespoon chopped parsley

Preparation 10 minutes preparation + 10 minutes cooking

Heat oil in a pan over medium heat.

Sauté two peeled garlic cloves until golden brown, then discard.

Add rinsed, boned, chopped anchovies and sauté for 2 minutes.

Remove pan from heat and break apart anchovies with a fork. Season with pepper and add chopped parsley.

Meanwhile, boil pasta in a large pot of salted water according to package directions.

Drain, reserving some cooking water, and toss with prepared sauce, adding a small amount of pasta cooking water, if necessary.

Serve hot.
