Stuffed Calamari with Sautéed Artichokes and Grape Tomatoes

Ingredients for 4 people


1 1/2 slice Italian Bread
1/8 cup Heavy Cream
1 1/2 pound Medium Calamari
1 tablespoon Fresh Parsley Chopped
1 clove Garlic Chopped
1 tablespoon Italian Breadcrumb
3 tablespoons Extra Virgin Olive Oil Divided
2 Medium Artichokes
1 cup Grape Tomato Peeled



Preparation 20 minutes preparation + 30 minutes cooking
1. SOAK bread slices in heavy cream

2. REMOVE tentacles from the body of the squid

3. Chop up the tentacles and place in a bowl

4. Add the bread soaked in heavy cream, chopped parsley and chopped garlic

5. Season with salt and pepper

6. Stuff each calamari with this mixture

7. PLACE on parchment paper on a baking sheet dusted with breadcrumbs

8. Drizzle with 1 tablespoon of oil and bake for 30 minutes at 350°F or until completely cooked through

9. CLEAN artichokes and cut into wedges

10. Sauté with 1 tablespoon of olive oil, season with salt and pepper

11. ADD the peeled grape tomatoes during the last two minutes and sauté over high heat

12. REMOVE calamari from the oven and let sit five minutes before serving with the artichokes

13. Drizzle with additional oil if desired
