Wipe the outside of the melons with a wet cloth to remove any residue. Cut in half lengthwise and remove seeds with a spoon.

Use a melon-baller to remove the flesh from the melon, keeping the peel intact, since it will be used. Place raspberries in a colander, gently rinse for a few seconds and dry.

Place melon balls and raspberries to a bowl and splash with all of the brandy or Passito wine. Transfer to melon halves. Refrigerate for a half hour before serving.
