1 pound cipolline onions peeled
1 1/2 tablespoons butter
1 3/4 oz pancetta (Italian bacon)
2 tablespoons sugar
1 tablespoon vinegar
Salt to taste

Preparation 20 minutes preparation + 40 minutes cooking

Heat butter and sugar in a saucepan and cook, stirring, until sugar starts to caramelize. Stir in finely chopped pancetta and vinegar. Add onions and a pinch of salt.

Cover, lower the heat and cook slowly for about one hour. If necessary, add one tablespoon of warm water. The onions should look shiny and dark brown.
