Sweet and Sour Cipolline Onions

Ingredients for 4 people

1 pound cipolline onions peeled
1 1/2 tablespoons butter
1 3/4 oz pancetta (Italian bacon)
2 tablespoons sugar
1 tablespoon vinegar
Salt to taste

Preparation 20 minutes preparation + 40 minutes cooking
1. Heat butter and sugar in a saucepan and cook, stirring, until sugar starts to caramelize

2. Stir in finely chopped pancetta and vinegar

3. Add onions and a pinch of salt

4. Cover, lower the heat and cook slowly for about one hour

5. If necessary, add one tablespoon of warm water

6. The onions should look shiny and dark brown
