Sweet and Sour Meatballs

Sweet and Sour Meatballs

Ingredients for 4 people

1 ½ pound lean ground beef
2 eggs
1/3 cup pine nuts
1/3 cup golden raisins
12 amaretti cookies
almond milk
to soften the amaretti (if not available use milk)
as needed
1/3 cup chopped pistachios
1 pinch cinnamon
¼ cup sugar
½ cup white wine vinegar
extra virgin olive oil to taste
salt and pepper to taste

Preparation 20 minutes preparation + 10 minutes cooking
1. Soften the amaretti cookies in a few tablespoons of almond milk (or milk)

2. Plump the raisins in a bowl of warm water for 20 minutes, drain and squeeze out any excess water

3. In a bowl, combine the ground beef, softened amaretti cookies, eggs, raisins, pine nuts, chopped pistachios, powdered cinnamon and a pinch of salt and pepper, mixing well

4. Form the mixture into walnut-sized balls

5. Fry in a pan of enough hot oil (check temperature by dropping in one meatball) to cover the meatballs completely

6. When browned, remove with a slotted spoon and drain on paper towels

7. After all the meatballs are fried, place in a pan over medium heat with granulated sugar and vinegar and stir until the vinegar has completely evaporated

8. Serve immediately
