Tagliatelle with shaved truffles

First course

Ingredients for 4 people

3 cups flour 4 eggs
5 1/2 tablespoons butter
4 leaves sage
White truffle to taste
Salt to taste

Preparation 30 minutes preparation + 3 minutes cooking
1. Make a well in the flour, add eggs and knead until smooth

2. Cover with a kitchen towel or a piece of plastic wrap and set aside to rest for 20 minutes

3. Using a rolling pin or a pasta machine, roll the dough into paperthin sheets (1/8 inch or thinner)

4. Dust with flour, fold several times on itself and cut into 1/8-inch strips with a knife

5. Lay out on a lightly floured baking sheet to dry

6. Melt butter in a wide pan over medium heat, add sage leaves and sauté for a few minutes

7. Meanwhile, boil the pasta in a large pot of salted water and drain

8. Toss with butter and sage and garnish with the shaved truffle

9. Serve immediately
