Preparation 40 minutes preparation + 3 minutes cooking

On a work surface, make a well in the flour, add eggs and knead to obtain a smooth dough.

Set aside to rest for 20 minutes, covered with a towel or plastic wrap.

Roll the dough into a paper-thin sheet (less than 1/16 inch) with a rolling pin or pasta machine.

Lightly dust with flour, fold up several times and cut thin strips about 2 mm wide.

Spread the tagliolini very loosely on a lightly floured board to dry.

Bring a pot of broth to a boil, add coarsely broken tagliolini and cook for about 2-3 minutes.

Remove from fire and serve immediately.
