Tagliolini Soup

First course

Ingredients for 4 people

1 ½ cups flour
2 eggs
8 ½ cups meat broth

Preparation 40 minutes preparation + 3 minutes cooking
1. On a work surface, make a well in the flour, add eggs and knead to obtain a smooth dough

2. Set aside to rest for 20 minutes, covered with a towel or plastic wrap

3. Roll the dough into a paper-thin sheet (less than 1/16 inch) with a rolling pin or pasta machine

4. Lightly dust with flour, fold up several times and cut thin strips about 2 mm wide

5. Spread the tagliolini very loosely on a lightly floured board to dry

6. Bring a pot of broth to a boil, add coarsely broken tagliolini and cook for about 2-3 minutes

7. Remove from fire and serve immediately
