Ingredients for 4 people

1 head Torbole broccoli
1 egg
7 ounces ricotta
¼ cup grated Parmigiano Reggiano
salt and pepper to taste
For sauce
½ head Torbole broccoli
3 ½ ounces Taleggio cheese
Butter as needed

Preparation 40 minutes preparation + 20 minutes cooking
1. Rinse the broccoli under running water

2. Remove leaves and boil in salted water until a knife can easily pierce the center of the broccoli

3. Drain and chop, then mix with the ricotta

4. Add a whole egg, grated cheese and a pinch of freshly ground pepper and mix well

5. Fill individual buttered ramekins with the mixture

6. Bake in a preheated 325°F oven for about 20 minutes

7. To prepare the sauce, boil another ½ head of broccoli

8. Drain and purée in food processor

9. Heat sauce in a pan with diced Taleggio until the cheese is completely melted

10. Allow custards to rest for 5 minutes before turning onto hot individual serving dishes and dressing with sauce
