Tuscan Cake Bread with Raisins and Pine Nuts

Ingredients for 4 people
2/3 cup Black Raisin
¼ teaspoon Salt
4 cups Water
2 cups Chestnut Flour
¼ cup Olive Oil
¼ cup Pine Nut
1 sprig Fresh Rosemary Chopped
Preparation 0 minutes preparation + 0 minutes cooking

Preheat oven to 375ºf.

Place raisins in a small bowl and cover with water. Add salt and soak for 30 minutes.

Drain raisins, reserving water. Place raisins on paper towels and towel dry.

Sift flour into a large bowl and stir in salted water until blended. Add raisins and mix lightly.

Spoon mixture into a 10-inch cake pan lined with parchment paper and greased with olive oil. Top with remaining olive oil, pine nuts and chopped rosemary.

Bake at 375ºF for 20 minutes.
