Veal Scaloppine with Mushrooms

Ingredients for 4 people
1 pound Veal Loin
2 tablespoons Butter Divided
1 clove Garlic Minced
1 pound Fresh Porcini Mushrooms Sliced Thin (May Substitute 2 Ounces Dried Porcini Mushrooms)
½ cup Chicken Broth
2 tablespoons Olive Oil
½ cup Flour
2 tablespoons Fresh Parsley
Preparation 0 minutes preparation + 0 minutes cooking

Slice veal into 8 scaloppine pieces, pounded to 1/8-inch thickness.

Heat 1 tablespoon butter in a large skillet over medium-high heat. Add garlic and sauté until garlic turns golden yellow.

Add mushrooms to skillet. Cook and stir until mushrooms stick to bottom of pan.

Deglaze pan with chicken broth. add salt and pepper. Remove from heat and set aside.

Heat olive oil in a large skillet. Coat veal with flour and cook the veal in olive oil for 3-5 minutes, turning once, until brown.

Add the mushroom sauce, heat 1-2 minutes, or until reduced. stir in remaining butter. Garnish with parsley. Serve very hot.
