Ingredients for 6 people


1 POUND Veal Loin 2 TABLESPOONS Butter Divided
1 CLOVE Garlic Minced
1 POUND Fresh Porcini Mushrooms Sliced Thin (May Substitute 2 Ounces Dried Porcini Mushrooms)
1/2 CUP Chicken Broth
2 TABLESPOONS Olive Oil
1/2 CUP Flour 2 TABLESPOONS Fresh Parsley



Preparation
1. SLICE veal into 8 scaloppine pieces, pounded to 1/8-inch thickness

2. HEAT 1 tablespoon butter in a large skillet over medium-high heat

3. Add garlic and sauté until garlic turns golden yellow

4. ADD mushrooms to skillet

5. Cook and stir until mushrooms stick to bottom of pan

6. DEGLAZE pan with chicken broth

7. Add salt and pepper

8. Remove from heat and set aside

9. HEAT olive oil in a large skillet

10. Coat veal with flour and cook the veal in olive oil for 3-5 minutes, turning once, until brown

11. ADD the mushroom sauce, heat 1-2 minutes, or until reduced

12. Stir in remaining butter

13. Garnish with parsley

14. Serve very hot
