Ingredients for 4 people


2 eggplants
1 small bell pepper
2 medium potatoes
1 medium onion
1 pound tomatoes
1/4 cup basil
1/4 cup parsley
1/2 teaspoon sugar
2 tablespoons extra virgin olive oil
Salt to taste



Preparation 20 minutes preparation + 25 minutes cooking
1. Wash and cut the tomatoes into wedges

2. In a pot, heat oil over medium heat and add one finely chopped onion

3. Cook until golden

4. Add tomatoes and sugar, turn to low and cook for 10 minutes

5. Peel and slice the potatoes and add

6. Cook for 4 minutes, then add peeled, thinly sliced eggplants and chunks of washed, stemmed and seeded peppers

7. Salt to taste

8. Season with salt

9. Cook on low heat for another 10 or 15 minutes until all ingredients are soft

10. Add chopped parsley and basil and combine

11. Serve hot in a tureen
